Sheepford can only be a place-name if both "sheep" and "ford" are
documented.

Why not?  (q.v.)

Or we have to construct a name that is plausible according to period
patterns.  From the above, "Sheepford" looks reasonable to me.
Is there a problem with it?

says that Shefford in Bedfordshire was originally Sheepford, but, you know,
not an onomastics page.

https://en.wikipedia.org/wiki/Monkland_Canal says that the construction
started at Sheepford, which appears to be the modern name.
