There's a recent article in one of the Herb or Gardening Magazines(cannot
remember which one but I think it's a current HerbalGram) which talks about
a couple who are growing echinacea as a cash crop. They have a B&B and do
it for a multitude of reasons.

Personally, echinacea is one of my favorite herbs and it grows very well in
Ansteorra. It's also an attractive garden plant. Most commonly at the
nurseries you will find echinacea purpura but if you can the angustifolia
is the more medicinal of the two. And a little root goes a long way. I
usually tincture roots rather than make tea. the leaves are nice for teas
until you harvest the root. Spring is nicest to harvest but in a pinch I
have harvested them periodically throughout the year.

Comfrey's fun because no matter how much you harvest Comfrey there's always
a bit of root left to make new plants.
