 This is an odd thought but when I was a kid I used to made rock candy.
It's very easy -- you take a heavy concentration of syrup drop a string in
it and watch the crystals form along the string.  Could they have taken
rose flavoured sugar syrop and done this?  That would fit the description
of sugar candy of roses.

I think that the white syrop of roses make be a sugar syrop using light or
pale roses.  i have madde sugar syrup with very red roses with the end
result being pinkish...  Most of the roses in Europe at this time were
either red, pink or white...(I don't remember hearing about any yellow but
I could be wrong)
