HERB - Rendering fat

 Nope a hen is a chicken unless it's like a pea hen or a dadada hen, they'd
say that though..... The salt may be for two things either to act as a
preservative or to help express the fat.  (Like putting salt on eggplant to
get rid of excess water)  Those are my two guesses.
