I use the Jordanian sumac as a subsitute for something in Turkey called 'red 
pepper' which sets out on the table at all the little lokantas (restrauants). 
 From what I have found out, it could very well be the actual stuff.  I find 
the sumac at a Middle Eastern store.  I believe you can sub. papkrika.  sumac 
is one of those flavors that doesn't really taste like anything, but if you 
don't put it in the recipe you can tell something is missing.
