HERB - Grapes and roses

Greetings all,
     I don't know about here, but in Germany they cut the vines back around
November. Usually after the first good freeze. There is usually about 2 1/2
feet of the main stem left. It is amazing to watch them grow all the way
back out by June or July.

I have a question though. I noticed that a lot of vineyards plant roses at
the ends of the rows. Any particular reason?
