Herbal wines are lots of fun aren't they? Did you directly ferment the
herbs or have you made a decoction in already made wine? 
If it is not palateable as a wine consider turning it into an herb wine
vinegar. I made some tomato wine several years ago--made a dynamite
vinegar and very pretty when bottled.
