Are you fermenting a tea?  Or pouring sugar directly on the herbs?  I haven't made
"herbal wines" per se, but I've used herbs in my mead (I guess that makes them
metheglyns, not meads), and made fruit liquors using sugar and fruit.  I have
various recipes for things like elderberry wine, which I haven't looked at too
closely since I wasn't making them.  I'd like to know how it turns out.
