Sounds good. The mint that I made came out unexpectedly dry (described
by my family as "Wacked Scope"). The rose petal wine was quite sweet and
floral - almost cordial like, but the rose mead was dry and had a light
flower bouquet. 
Herb wines improve with lots of aging. If you can, put away a few
bottles somewhere and forget about them for a couple of years.
