HERB - Spices anyone?

Um. Do you want to know what spices are period for apple dishes, or just
what spices were being used at that time?

Off the top of my head, I can say, cinnamon, cassia, nutmeg, mace, cloves,
ginger, galingale, saffron, citrus peel, sugar, pepper...
