  When I make Beer I let the foam from the primary fermentation  bleed away
in to a dish. Not to much.  Then I rack (change the container) once the
heavy fermentation is done.  In maybe three or four days.  I do this as I
find the beer is less likely to produce a hangover.  I believe this is
because you are not fermenting all the spent yeast casings.
I don't have a PhD but I have drank a lot of beer :-)
