HERB - Preserving Violets

I am doing the feast for Crown Tourny of AEthelmearc. I would like to do a
salad with violets. Violets are just starting to bloom now. Crown is a month
away and I would like to have an ample supply. If I wait they may be spent.
Would putting them in White Wine Vinegar and using the vinegar and violets
in the salad, be OK? Or if anyone can advise a better method, please let me
know.
