Lemon Balm is great in lemonade, makes a lovey "white" wine that pairs with
fish and chicken just fine, it is nice in dressings for fruit salad, chopped
up in green salads, marinates for fish, makes a tasty cookie, mixed with
bees wax a funiture polish, a relaxing tea when mixed with catnip and lemon
grass, and just wonderful when added to the bath. And if it is really
abuntant it is a GREAT strewing herb - I throw it down in the chicken yard
and it helps keep "things" smelling nice and the bugs don't seem to be as
bad.

>I have had great luck substituting lemon balm for the mint in sekanjabin.
Comes out tasting like a lovely lemonade but quite refreshing and actually
better for rehydrating than gatorade.<
