[Herbalist] Period Winter Roses

Greetings to the lists!

Okay, I'm going crazy (as per usual), and I need help.  Once, long ago,
on a list, a person posted a period method of saving roses till the
winter.  I don't remember the method.  Does anyone remember anything like
that?  Our shire's roses are blooming like mad, and I'd love to save some
in a period fashion and use them for a winter revel.
