[Loch-soilleir] SPAM/Pineapple upside down cake - addendum

A few clarifications.  The basic pineapple upside down cake recipe is from www.bettycrocker.com.  I don't care for maraschino cherries, so they were omitted.
We used NOH of Hawaii brand Japanese Teriyaki Seasoning Mix packet with a half cup of water. William added a Tablespoon of extra brown sugar. You can use a bottled Teriyaki brand or your own marinade to suit your palate.
The butter/margarine used is half a stick (4 Tablespoons).
The 20 oz. can of pineapple rings came up a few short to fill the bottom of a 13x9 baking pan while touching.  You may have to buy an additional can.
William "banged" the pan on the counter for at least 5-10 minutes in order to have the cake batter settle to the bottom and to have almost all the air bubbles rise.

?
Teriyaki Spam/Pineapple Upside Down Cake
?
1 can SPAM
1 package dry Teriyaki marinade
1 cup plus 1 tablespoon brown sugar
? cup butter
I can sliced pineapple, drained with the juice reserved
1 jar maraschino cherries
1 box yellow cake mix
Oil and eggs as required for the cake mix

Cut the SPAM into 16 slices. Mix the Teriyaki marinade and 1 tablespoon of brown sugar per the marinade package direction. Put the sliced SPAM in a plastic ziplock bag and pour the marinade over it. Marinate in the refrigerator for 2 hours, 4 hours maximum.

Preheat oven per the package cake mix direction. In a 13x9 inch cake pan, melt the butter inthe oven. Once the butter is melted, remove the pan from the oven and sprinkle the 1 cup of brown sugar evenly over the bottom of the pan. Arrange the pineapple slices on the bottom of the pan and placed a stemmed cherry in the center of the pineapple rings. Arrange the remaining stemmed cherries around the pineapple rings if desired. Layer the marinated SPAM slices over the fruit.

Mix the cake batter as per the direction on the cake mix box. Take the pineapple juice and add enough water to meet the water called for in the cake mix directions. Pour the cake batter over the SPAM and fruit in the pan. You will need to bang the filled cake pan on the counter to get the batter to fill the spaces under the SPAM layer.

Bake per the cake mix directions. Remove the cake from the oven and run a knife around side of the pan to loosen the cake. Place a heat proof plate over the cake pan and turn the plate and pan over at the same time. Leave the pan in place to let the brown sugar to be absorbed in to the cake for a minimum of 5 minutes.Remove the pan. The cake can be served warm or cold.

Store covered in the refrigerator.
