There are a lot of SCA traditions that have grown up over the years around this topic.  While the core of the concern is to offer proper respect or avoid offending the party in question, the period practice is still the right approach in the SCA.  Unless you are talking to Sir Finn about a knightly or marshallate matter, or to Master Finn about a Laurelate or Pelicanate matter, or (as is always the case) he expresses a preference in conversation with you, use the highest ranking title.  If you communicate with Count Finn, you can not really go wrong.  He can ask you you use a lesser title without any cause for offence.

Title aggragating before the given name is an SCA invented practice and is not period.  The closest period practice would be the inclusion of full titles in a formal legal document like a grant or marriage announcement and even in those he would be addressed as "Sir Finn Kelly, a Count of Ansteorra, Master of the Order of...", etc.

So, use the single title of highest rank unless he expresses a preference or the topic lends itself to a specific title.
