Just a quick note from Australia - I've been using 8oz. or 12oz. canvas (both proffed and loomstate) for my pavilions, and the only problems I've had with water leakage have
been along a very few seam lines which I failed to wax.  You will get some problems with wicking if you are leaning something against the wet canvas, but not otherwise.  The
canvas fibres will get damp and then swell, effectively sealing off the fabric against any leakage.  If the rain is particularly heavy, I've had some slight condensation on the
inside of my roof fabric, which is never heavy enough to drip or run.  Canvas can (and is) used for making buckets and water containers, and I've set a goal of using the
materials used in period (or as close as I can reasonably expect to get).  I have had only slight problems with molding when I was unable to dry the fabric properly before
packing up (bleach fixed that problem).
