one word *rats*.  

animals based products applied to leather will attract the vermin and
they will eat the leather, canvas, or anything else you have applied
it to.  have a pair of wonderful bald-mountain moccassins (that were
my favorites) that were destroyed when a rat got in and chewed
through one one them ... took a fancy to the "natural" tallow-based
leather dressing i was experimenting with.
