Lady Clarissima has taught a medieval cooking/food class or two (and did a feast class that was excellent), HL Jacinth has done quite a bit of research into medieval foods and cooking...
 
I think what might be better than a "class" would be a "recipe testing"...in which people get together to research and test recipes based on and item or location or time frame...
