  Question:  How do those among us who keep kosher deal with feasts?  What can
  be done to reasonably accommodate them?

I think I mentioned this on this list...

For one feast, my wife provided all her recipes, in advance, to some people
that keep kosher.  They worked out between them who would make which dishes
in advance (and bring them to be reheated) and what would be cooked on site.

For the chicken dish, the kosher guests brought their own kosher chicken
(early in the morning) and it was prepared in its own foil pan with the
others. Their table was served especially.

It seemed to work.

For another evening revel in someone's home, I prepared a few snacks in
advance.  I even koshered my pans and measuring utensils. (boiling in water
for about 10 minutes).  It wasn't that big a deal, frankly.
