As for the feast management, I, too, had problems. I had signed up for
part of a table as requested only to arrive and find someone else
occupying the entire table and unwilling to discuss whether they had
signed up or not. My husband spent quite a while trying to locate 2
seats within reasonable range of each other so we could eat together.
This feast also tried to segregate the off-boarders. As that is uncommon
here I think it caused a lot of confusion. As for the serving, they
served each course all at once on large platters. The presentation was
nice but required reshuffling of all sorts to fit the platters on the
table. They also were very short on tableware and had to remove the
platters/bowls almost immediately so they could be used for the next
course.

I agree that the head cook should be providing an enjoyable experience,
but I don't think you can expect a head cook to troubleshoot serving
problems. That is the head server's responsibility. The cook should
concentrate on making sure the food is ready and good and prepared for
serving.
