As long as you have a reasonable selection of entrees during each course (or
have multiple courses with different entrees -- one
vegetarian-type/dairy-based entree, one with meat, etc.), you should be
reasonably safe.  Just vary the ingredients of the dishes, and everyone should
be able to pick and choose among dishes.

Just be very careful in preparation to not cross-contaminate the dishes.

Question:  How do those among us who keep kosher deal with feasts?  What can
be done to reasonably accommodate them?
