Regarding the use of waxed paper or parchment paper to use when pouring 
out the sugar/fruit syrup, how about just buttering (or using Pam) on 
the pan?  This usually allows me to remove the fruit "leather".  Avoids 
the problem of the paste sticking to any kind of paper.
