If people let me know their specific allergies at least two weeks in
advance, I will cook their complete meal sans the allergy ingredients,
then place it in seal-a-meal bags with their name on it.

If it is a wheat alergy, I will make small single person loaves, pot-pie
sized tarts of a dish, using either rice or corn, or garbanzo bean flours.

But the key is, they must make their needs known to me at least two
weeks before, when I can easily accomodate their needs.

Many of the people who wait until the night before or the day of to inform
me of their allergies, will usually be told that most of the feast except 
for
roasting and heating sauces has already been completed. And that next
time, I would be more than happy to accomodate their needs if they
inform me two weeks ahead time minimum.

Yes, I do hear a lot of shouting and have seen quite a few tears. But, I
refuse to be made responsible for their condition. It is their condition,
they are the ones who must live with it.

Cooking for a large event, usually in a too small kitchen, is not conducive 
to
special orders the day of.  Everything is generally timed and all resources
are tightly allocated. I explain all this.  Then I usually show them the
special orders that I received in advance that were accomodated.  I explain 
that planning ahead next time, will get them the accomodations they
need to eat at feast.

But then, there is always the sob story or two.  I didn't know so-and-so
was going to be here, and I want to sit with them at feast! I explain they
have a couple of options: They can convince their friend to sell the ticket 
back, and go off-site to eat. They can convince their friend to sell the 
ticket
back, go and get some stuff and bring it back and eat at the back of the
hall. They can peruse the pamplet showing all the recipes used with a
complete listing of ingredients, determine if there is enough to eat taking
in account their special needs, then buy a ticket. Or they can eat offsite, 
or in the back of the hall, and meet with their friend after feast is over. 
But
making special accomodations at this time is not an option.

I am more than willing to be gracious and accomodating if they are
considerate enough to let me know about their special needs in a timely
manner.  But, making special needs known at the last minute is not
considerate in my book.  It is a blatent attempt to force me to take
responsiblity for their special needs.  And this I refuse to do.  I already 
have enough to be responsible for that day: all the feast dishes made 
correctly and served on time, my helpers, my servers, the feast hall 
decorations, the special accomodation meals, cleanup, and getting back 
everything loaned to the proper people.

By the way, for servers, I always make an extra table serving or two
of everything for the servers specifically.  And they have a special area
set aside in the kitchen, or to the back of the serving hall, where they
can sit and enjoy the exact same food as the feast goers. Or, they are
allowed to sit one at each table where they are serving and so may eat
with the feasters. They are never allowed to make do with what comes
back or what is left over. They are doing me a tremendous favor for no
pay, the least I can do is make sure they get to eat well.
