  Ok, since I've never poached fish before, or done a lot of these regular
  cooking techniques, what's a good basic learn-to-cook book?  I've done lots
  of breads and desserts, but I'm definately lacking in knowledge of terms
  and techniques for main course types of food.  I think I'd be less afraid
  to try my hand at actually cooking these recipes if I knew more of the
  basics.

I did most of my cooking learning from those dear Rombauer's.  The older
version of "Joy of Cooking".  It has a version of nearly every recipe, and
some kind of description of almost every technique.  I like it.

An interesting, and nearly indispensible book for learning more about how
things work, is "How To Repair Food".  I like that too, because you are
going to need it.

When I was younger, more arrogant <crowd gasps> and in High School, I joked
that I was never going to bother learning to cook.  The most Irish Girl I
know gave me "Fearless Cooking for Men", which actually turns out to have
been useful many years later.  I gave her "The Compleat Jewish Cookbook",
but she didn't get the joke.
