Penzey's Ltd. one of the best mail order spice catalogs in the world IMHO
defines Cassia Cinnamon as "native to Southeast Asia, especially southern
China and northern Vietnam, and has the strong, spicy sweet flavor most
Americans are familiar with."  Ceylon, or "true" cinnamon on the other hand
"has a much different flavor.  It is less sweet, with a more complex, citrus
flavor.  Ceylon Cinnamon is also known as old fashioned cinnamon, and is
prized in many other areas of the world, most notably England and Mexico,
where it is preferred for all uses."  It comes from Sri Lanka.  I have  both
and have to agree with The English and Mexicans.  Ceylon Cinnamon rules.
 Penzey's has both available by mail.  If you are interested in getting a
catalog email me and I'll give you their information.  As this is not a sales
