Cassia is grown in China as an agricultural crop and exported mainly from
that country. True cinnamon is grows in Ceylon and is harvested from wild
trees.  See the "History of Food" for further and more fascinating details
about the spice trade.


By the way if you ask for true cinnamon at your local Spices-R-Us you should
get what you want but when inquiring about cassia be sure to mention you are
talking about the cinnamon available at any grocers because there is a plant
species (Cassia var.) that is an herb and bears no resemblance to the spice
cassia.
