Lots of period recipes, I think, but I don't have any right here.
Don't worry. Someone will have cookbooks handy and pass some recipes
along. But I know how to roast them. I do it every Christmas. Prick the
shell with a sharp knife. Important! They'll explode if you don't go all
the way through to the meat. Put them on a cookie sheet and put them in
the oven at 350 degrees for about 20 minutes, depending on the size of
the chestnuts. Fantastic things, chestnuts. They and dried figs are the
best part of the holidays!
