In a couple of Anglo Norman culinary collections (or something like that)
by Constance Hieatt and Robin Jones, _Speculum_ v61 (1986) #4, pp 859-882
there is a technique given for cooking without fire. It involves a double 
boiler arrangement and lime, and is said to take a few hours. If that is 
the sort of thing you had in mind I could dig out the article tonight (It 
is an Anglo-norman primary source, preseted as an edited text as well as 
a translation, and dates to around 1300.
