SC - Polished Rice

I deleted the message I was going to make a comment on... sorry.

I just a "visual" of a bunch of brownies showing up in the darkness 
of a kitchen with little chamois cloths polishing brown rice until it 
was white!

I would be interested in knowing what types of rice were available in 
period.
