Mi'lady, 
Don't overwater, don't underwater, keep out of intense sunlight until the
divisions "perk up" and most importantly- sterilize the new pots and the tool
you are using to divide the plant.  Make sure the tool is very sharp and
don't rip the roots apart.
These are general tips for dividing all plants not just sorrel.  Treat it
like it was a favorite pet who just went through major surgery.  Welll not
EXACTLY like a pet, just give it lots of love.  
     Remember-herbs can take alot of abuse before giving up the ghost.  Try
dividing just one of the plants to see how it goes.
