SC - Danish cooking

       Greetings and salutations, good gentles!  I am looking at doing a
       Madrigal Dinner as part of a possible demo and could use some
       suggestions as to a 5-7 course dinner menu.  Does anyone have any
       recommendations (and hopefully recipies)?
