Agreed. Of course, kim chee is almost never buried anymore, not even in
Korea. It is refrigerated, though, to preserve it at a fairly specific
level/state of fermentation, and a nice hole in the ground will often do
that. I wonder why Westerners are intimidated by kim chee, but have no
problem with the cabbages or turnips stored in the root cellar...at
least kim chee is put in a jar first.
