Why not?  Vegetable stock renders the dish suitable for vegetarians. Vegetable
stock is often much lower in fat than chicken stock and can indeed be made
completely fat-free.  (With chicken stock, even when you remove the fat, it
still has a little fat in it.)

The taste changes only slightly unless you use cabbage or broccoli (strong
flavors - I wouldn't.)
