Maize is by certain stretches of the imagination "period" but IMHO it should
be avoided for use in feasts for 2 reasons. 1> It's use was almost exclusively
animal feed in late period with some modern German friends still referring to
it as such. 2> If it's use as human food in Europe could be established for
NOBILITY it would almost certainly be a novelty and IF recipes exist for it's
preperation as human food they would be well within the framework of the
period when cooking became early modern and would not be representative of
Medieval cooking.

IMHO, a good rule of thumb for memorable Medieval feasts, as opposed to period
feasts, would be to exclude New World foods entirely UNLESS the feast's
purpose was to emulate Aztec or Inca cokkery during "period".  Most folks I
know want to experience Medieval food and have very little interest or desire
to go to a feast which features the foods they eat on a daily basis.
