  Recently, on the SCA cooks list,, someone came up with the "bright"
idea
  of having at least one of the cooks in the kitchen doing feast to have
a
  food handling license, mainly on concerns about food safety issues.

Congratulations: the Cooks list is now officially old: that topic came up
when it was new.

States vary on their requirements, and on their abilities.  You may want
to
(if you are concerned) see what the state offers in terms of classes for
its
local eateries and licensed food handlers.
