SC - Medieval exhibits in Philadelphia/NYC area?

Sounds like good stuff.  Did they use this in period, does anyone know? 
I haven't been to Provence since I was a teen-ager, but their cooking was
cook enough to remember for a loooong time!  I'm looking forward to
getting the recipe.
