I am not purposely trying to offend here, but please forgive me if I am.
Hedgehogs are  almost entirely if not exclusively vegetarian. Vegin animals
such as cows, sheep, rabbits, etc. have always been lauded as being of finer
flavor than those which are omnivorous or carnivorous. For example, thrushes
vs. chicken; veal vs. goat; deer vs. bear; dormouse vs. cat; etc.

>From personal experience I would certainly choose groundhog over muskrat, as
well as beaver over opposum. The point being, animals which consume vegetable
products are usually sweeter and less objectionable to the human palatte than
carrion and meat eaters.
