Just a quick note:
Sulfite may be fine sterilants for wines and meads, but they have their
limits. 
Do not use sulfites EVER when using malt as a base, ( as in beer brewing
).  The sulfites combine with some byproduct of the yeast action on the
malt sugar to make hydrogen sulfide gas. ( rotten egg gas )
Even a little of this makes TRULY "skunky" beer.  

I use the "two chamber" type of lock and I have no problems with
crosscontamination. I also use boiled water in the lock.
