By the way, there is often a confusion between "homogenization" and
"pasteurization"
Pasteurization involves heating the milk to kill most of the bacteria.  It
does not affect the homogeneity of the product, so cream still rises.
Homogenization involves mixing the milk so thoroughly that the fat molecules
are broken up and the fat mixes with the whey.  So cream does not rise to the
top.
What is sold as "whole milk" for the most part has been both homogenized and
pasteurized.
