Yes, gum paste is period - late Tudor/Elizabethan, and probably earlier 
in Italy.

One comment on sculpting with marzipan - Keep in mind that it might 
also have been put over an armature, that not the entire thing would 
have been edible, especially if one is dealing with a large item.  
Mashing marzipan (catchy song title!) onto an armature would require 
less stiff marzipan.

recipe should be there.
