SC - Galingale substitute for Ginger

Reporting back on the experiment.

My husband and two others in our barony have MAJOR allergies to Ginger,
asthmatic, not breathing kind of thing, and as many of you know ginger
is a common spice in medieval recipes. With Galingale recently on the
list as a taste substitute, one of our local cooks (thanks again Korney)
presented him with a container of ground galingale to try. 

We made gingerbread this weekend, using galingale to sub for ginger
and...... Not a single problem. My husband loved the taste difference
(we have had to make gingerbread without ginger, yuk, but we all do what
we have to do) and we are now going to try it on a couple of others
(warning them first of course) 

So again, thank you Korney for getting us the Galingale to try, and
thanks to the list for informing us of this delightful substitution. Now
if only I can get the brewers to make the Ginger mead he has be dying to
try, with Galingale, hum....
