SC - Juniper berries

Greetings!

I was following the recent discussion of juniper berries with some interest.  I must agree, substituting pine nuts for juniper berries will not give you the same effect.  Pine nuts are sweet and buttery tasting.  Juniper berries are slightly acidic and well, like someone else said, resiny.  It is a very nice flavor though.  I did an experiment at the end of last week.  If any of you have cable or satelite and watch 'Essence of Emeril' on the food channel, I made a beef pastrami with his recipe.  I found it quite tasty.  There were a few juniper berries in the brine and quite a bit more in the rub for the final flavoring (1/3 cp juniper berries and 1/4 cp. black pepper rubbed onto the meat).

As far as spices go, I think I am spoiled.  We have an herb farm out here that carries juniper berries AND grains of paradise.  They do not carry, but will order cubebs.  And, the asian market near my house usually has fresh galangale and always has jars of powdered.  Grains of paradise is a really neat spice.  It is kind of a citrusy-pepper that goes really well with chicken.
