Verjuice would be a great substitute, IMO. Well, not really a substitute but
rather a return to the item that lemon juice was probably used as a substitute
for in a possible.earlier form of the recipe. :-) 

This of course is all theory but at the very least the substitution of
verjuice would produce a dish that would be closer in flavor to the original
than a vinegar substitute would produce.
