Christina van Tets posted a bunch of Compleat Angler recipes.

Thanks for posting these, though I don't have any fresh-caught fish to try
them out on.  I can't answer any of the specific questions you ask, but I
do notice that these look a lot like the other English late 16th to 17th
century recipes: a lot of butter in the sauces, herbs, lemon, anchovies...
