   Hey folks,
    In HG Collection, Vol II, Un Tratado da Cozina Portuguesa Do Seculo
XV, there are recipes for candied citron  and "pumpkin" or squash, which
seem to be the right method, and using similar ingredients (a hard inner
rind of a fruit)
