Around here, cider still has the solids in it, but they are pasteurizing it,
too.  In fact, it's difficult to find unpasteurized cider unless you go to a
farmer's market - and it has to be clearly labelled "unpasteurized", I
believe.  Apparently there are starting to be problems with food poisoning in
this area as well; I'm not sure what organism is the problem.
