I suspect maybe the emphasis is on the word 'average'. The recipes that have
been handed down to us from the middle ages are not recipes which would have
been considered average. It would be closer to think of them as 'gourmet'.
Lettuces were mostly used as a cooked green as opposed to a fresh herb.
