Personally, I don't do "vegan" dishes at all, ever, on purpose.  If
someone wants to eat vegan, i suggest they bring their own food.  Now
occasionally, something in the meal is accessible to a vegan - a simple
salat of greens, a spinach dish with currants and vinegar - but for the
most part this is just -too- much to ask.
