There's a Spanish pottage called "Verines" which is made with almond 
milk and colored green with herbs.  It is also a subtlety of 
sorts, as the instructions call for a layer of herb-less pottage 
to be carefully poured on top.  So presumably the server would dip 
his ladle into a bowl of opaque white soup, surprising the guests 
with a sudden color change.
